Human well-being and health improvement are directly linked to nutrition. Recognition of the well-established connection between health and nutrient-rich food highlights the need to cultivate, maintain, and develop a new branch of food science known as functional foods. Over the past three decades, there has been a significant increase in research interest in using seaweeds as functional foods or nutraceuticals that provide health benefits beyond their nutritional value. Furthermore, seaweeds have been studied for the presence of metabolites that exhibit biological activity, enabling the production of therapeutically superior products.
